Recently, I’ve come to the realization that I’m not getting any younger, and if I don’t start now, I’m going to get rounder with my eating/lack of exercise habits. So, in a whirlwind of motivation, inspiration, and disgust at my modest amount of baby-fat, I’ve picked back up with my strength training and cardio-intense workout habits of my college days. (And I’m — thankfully — starting to see results!)
Today, I had a glimmer of weakness: I was craving chocolate chips cookies something FIERCE.
2014 Workout-strong Meghan decided to make chocolate chip cookie dough…the healthy way 😉
^^^I know it doesn’t look like the most appetizing snack in the world, but it conquers my sweet tooth 😉
1/4 cup chia seeds
1/3 cup cashews
1 scoop vanilla protein powder
1 tbsp honey
1 tsp vanilla extract
Splash almond milk
1/4 cup cacao nibs
1 tbsp PB2 with premium chocolate
Blend chia + cashews in your food processor until it become a powder.
Add protein powder, honey, and vanilla extract. Blend until smooth. Add almond milk sparingly until mixture forms dough-like consistency.
Scoop into mixing bowl and fold in cacao nibs and PB2.
Refrigerate 1 hour. Enjoy 🙂
(The chia will gel up and thicken your cookie dough, so don’t worry if it’s a bit runny!)
